A native Texan, Chef Duane DuPrey got his start in Grandma's kitchen. Since then he has travelled the world over, honing his craft in Maryland, Pennyslvania, and Washington, D.C., in addition to his home state. Landing at Harry's, Duane is excited to pair fresh garden produce and proteins from Airlie Berkshire Farm with the bold flavors of his repertoire. Where did you grow up?
Austin Texas. Hook Em!
When did you know you wanted to be a chef?
Since I was a kid watching my grandmother, mother and 5 aunts in the kitchen, until she would kick me out of the kitchen. Boys were not supposed to be in the kitchen. Our job was to help grandpa dig the hole for the roast (pig, cow etc..)
What is your favorite thing about Harry's and Airlie?
The ability to create dishes with a farm in our backyard. Produce and proteins. Beautiful property with room for growth.
What do you do when you’re not at work?
PS4 gaming with friends, firing up the grill. Try to find time for more tattoos, I'm overdue. Rest!
Why do you love your job, cooking; and creating new dishes?
The question answers itself. Cooking and creating new dishes with fresh produce and proteins that I can walk outside and pick myself. Experimenting with different flavors.
What is the one kitchen tool or gadget you cannot live without?
My chef knife.
Do you have a favorite wine, beer, or cocktail?
2014 Alain Jeanniard Bourgogne Pinot Noir. Beer: DoubleD IPA and Shiner Cheer Beer (Christmas time). Cocktail: Tito's, lime Perrier, cranberry and don’t forget the lime wedge.
What’s your favorite movie?
We would have to go back a bit. Movies today do not interest me, too much CGI...Savior with Dennis Quaid.
What’s your favorite vacation spot?
Have traveled everywhere and the answer is Home, Austin Texas. I'm simple like that.
What do you like to cook when you're at home?
Mainly Latin/Mexican food and Korean. My wife is Korean.
What is your "last supper" meal?
Gallo pinto, ancho grilled chicken thighs, pan fried plaintain.
What’s the best advice you’ve ever received and from whom?
My father. Chester DuPrey. "Never let a day go by without learning something new, even if it’s a definition of a word. Do not waste a day, always learn so you can teach."
What would you do if you won $1 million in the lottery?
Donate 35% to various military charities. Military is big in my family. Put rest in bank, take 2 days off, then go back to work.
Who is your hero and why?
My father. He spent every day of his life giving 100%. Hardest working man I ever knew. Even in his last days he would give me words of encouragement and advice.
